Four friends, craving chicken sandwiches.
It’s a long drive back from Yosemite National Park.
It was the last big hurrah on the Sunday before San Francisco announced the shelter in place for Covid-19.
Four friends, tired, a little sore and very hungry, began noodling on the perfect chicken sandwich. Hot, crispy, some pickles. Like the Nashville Hot sandwich, drenched in spices, juicy chicken. As the last of the Hetchy Hetch reservoir passed them by, a name came to the tip of the tongue. It was mostly a way to distract from the uncertainty of the near future.
At home, the name stuck. It was percolating around in their heads. Restaurants were to close their doors to guests, focusing on feeding folks with take out and delivery. Employees were dreading the lay offs, the reduced hours. And it came to them. Sell these crispy, spicy, fun sandwiches to the community. Do it in a restaurant that was already selling food to the public to go.
Make it easy, make it safe, and most of all make it hot. But do it for a cause. So this new crispy chicken sandwich, was going to have a purpose. 3% of proceeds were going to go directly to those most affected - hospital workers, front line service workers, and hospitality employees.
